How to set up Google AMP for your products?
I have looked at some options on the Shopify App Store and found AMP by Shop Sheriff to be a free app that can get the job done.
The free version will allow you to create and publish AMP versions of all your products, with licenses of $9 and $29 per month giving more features.

Designing Google AMP version of your store
A limitation is that you will have to use one of the three themes that Shop Sherriff offers.
I was able to make a limited but pretty close copy of our store using the included AMP Page Builder.
Conclusion
Google AMP is worth adding to your store, for all the benefits you can receive from it.
Although, weigh this up with the needs of your current store first. As a better option might be to skip Google AMP and look at other possible speed improvements.
